Cabbage Recipes

Cabbage, chicken salad
Salad:
2 c chicken, cooked, diced
2 Tblsp sesame seeds
1/2 head chopped green cabbage
1/4 c diced onion
1 pkg crushed Ramen noodles (chicken flavor)
1 c mandarin oranges
1/4 c almond slivers toasted

Dressing:
1 pkg chicken Ramen flavoring
1 Tblsp sugar
1/2 c olive oil
1 tsp salt
1/2 tsp pepper
3 Tblsp seasoned rice vinegar

Mix salad ingredients together.
Mix dressing, pour over salad & toss.

Cabbage Fruit Salad
2 c raw cabbage, shredded
1 med. apple, diced
1 Tblsp lemon juice
1/2 c raisins
1/4 c pineapple juice
1 1/2 tsp lemon juice
1/4 tsp salt
1 Tblsp sugar
1/2 c sour cream
Prepare cabbage & apple. Use 1 Tblsp lemon juice to wet diced apples to prevent browning. Toss cabbage, raisins & apple. Mix juices, salt & sugar. Add sour cream. Stir until smooth, add to salad & chill.


Baked Stuffed Cabbage
8 lrg cabbage leaves
1 lb ground beef
3 Tblsp chopped onion
2 Tblsp chopped parsley
3/4 tsp salt
1/2 clove garlic
1/2 c tomato sauce
Heat oven to 375. Wash & blanch cabbage leaves. Drain & dry. Combine remaining ingredients except tomato sauce. Divide meat mix into 8 equal portions on cabbage leaves. Roll leaves around meat, secure with toothpick. Place seam side down in dish. Cover with tomato sauce. Bake for 1 hour.

Orzo, Tomato, Zucchini Salad

2 oz orzo, cooked & chilled
1 small zucchini, peeled, cut into long thin strips
1/4 tsp salt
2 cups tomatoes, diced
1/2 c mozzarella cheese
1/4 c onion, diced
1 Tblsp lemon juice
2 Tblsp fresh cilantro
3 Tblsp olive oil
1/8 tsp pepper
1/4 tsp garlic powder

Lay zucchini on a paper towel, sprinkle w/salt, cover w/paper towel to soak up juices. In bowl mix tomato, cheese, cilantro, onion, lemon juice, olive oil & seasonings. On plate place orzo, top w/zucchini, top w/tomato mix. Enjoy

We are not big zucchini eaters in our house and I was surprised that all of this got eaten. It was super easy to make and actually tasted okay for having zucchini in it.

Chicken Potato Casserole


cubed, boiled potatoes
1 can chicken, warmed
1 can cream of chicken soup
onions, diced
cornflakes
grated cheese
milk
salt and pepper
I cut up four small potatoes and boiled them for 10 minutes. I warmed the can of chicken and added it to the soup, milk, onions and cheese mix. Then added in the potatoes. I put all ingredients in a casserole dish in a 325 oven for 30 minutes. Right at the end I added the cornflakes.
