Pesto

2 cups spinach
1/2 cup pine nuts toasted
2 tbsp lemon juice
1-2 tsp lemon zest
1/3 cup olive oil
1/3 cup Parmesan cheese
salt & pepper

Mix all together in food processor, you want a paste like consistency.

You can substitute the pine nuts for nuts that you prefer.
